Quick and Easy Banana Bread {Vegan + Gluten Free}


Making banana bread is the perfect way to deal with a bowl of blackening, overripe bananas that are destined for the compost bin. Mash em’ up, mix them with a few other ingredients, sprinkle some nuts or seeds on top, and in no time at all you’ll have a warm, steaming loaf of bread just waiting to be sliced and served. All while making your house smell like a delicious bakery.

This banana bread is simple and straightforward and healthy enough to enjoy at any time of the day. It’s delicious warmed up for breakfast and smothered with butter, peanut butter or jam. No mixers or fancy kitchen equipment involved.

Banana Bread

Makes 1 loaf

  • 1 tbsp ground flax seeds + 2 tbsp water
  • 4 very ripe bananas
  • 1/2 tsp ground vanilla or liquid vanilla
  • 3 tbsp melted coconut oil
  • 3/4 cup pure maple syrup
  • 1/2 tsp cinnamon
  • 1/4 cup almond milk (or other milk)
  • 1.5 cups buckwheat flour
  • 1 cup rolled oats ground into flour
  • 3 tsp baking powder


  1. Preheat oven to 350F and grease a loaf pan
  2. In a small cup, mix the flax seeds and water and let sit for 5 minutes
  3. In a large bowl, mash the 4 bananas using the backside of a fork
  4. Add the vanilla, coconut oil, maple syrup, cinnamon, almond milk, and flax mixture and stir until combined
  5. In a mixer, mix 1 cup of rolled oats until you have a fine flour like powder. Stop and stir to make sure that all the oats have been finely ground
  6. Add the oat flour, buckwheat flour, and baking powder to the bowl and mix until everything is well combined
  7.  Bake for 35-40 minutes or until golden brown on top
